[FIX] point_of_sale: New IoT Box build dependency
A new dependency (`polib`) has been added in commit:
a7621137cb0d75ec545152d5e1d413c9d3548e45
Since it is used in the part of the code that is copied to the IoTBox,
we need to add it to the list of packages that are installed during the
build of the image.
